Finger Millet Porridge


4 tablespoons of finger millet flour

4cups of water

Lemon/ citric acid to taste

Sugar to taste

Milk (optional)

Yield 8 portions


  1. Bring the water to boil.
  2. Make a paste by mixing the finger millet flour in cold water.
  3. Mix into the boiling water and stir continuously until thick.
  4. Allow to simmer for 10 minutes.
  5. Add sugar, citric acid or lemon juice.
  6. Allow to simmer for a further 5 minutes.
  7. Remove from the fire and add boiled milk (optional).
  8. Serve hot.
